i'd consider simply changing the hardware and keeping them as they are....with all of the other changes that you are planning, the room will look different even with the cabinet color being the same....besides, restaining the cabinets is A LOT of work!! and that you eliminate decor above the cabinetry...in a smallish space like yours, adding decor up there closes in on the space from above, actually making it feel smaller.
